Nori Bar has a new 'rollmakase' experience for a limited time

The hand roll restaurant’s twist on omakase includes sashimi, nigiri, hand rolls and a choice of dessert. The $85 curated menu is only available at Nori Bar’s Waikīkī location for a limited time.

Nori Bar Waikīkī is offering its unique spin on an omakase — called rollmakase — for a limited time. Its version of omakase features a curated menu of sashimi, nigiri, hand rolls, wagyu poke and a choice of dessert.

Nori Bar’s rollmakase experience ($85 per person) is available daily only at the eatery’s Waikīkī location. It recently launched and will be available until Oct. 23.

“We came up with rollmakase as a playful take on omakase, built around the creativity and variety of Nori Bar’s rolls,” says Nori Bar managing partner Chancelor Kim. “We wanted it to feel like a full experience, with a thoughtful progression of flavors and textures.”

The menu includes 12 items, plus miso soup and dessert.

“It features a mix of Nori Bar favorites and special preparations created for rollmakase,” Kim says.

The curated menu begins with smashed cucumbers and wagyu poke. It’s followed by a sashimi trio of maguro, king salmon and hamachi.

Next come toro shiso and spicy negi hamachi hand rolls. The toro shiso features scraped bluefin tuna atop a shiso leaf; the hamachi hand roll includes a housemade spicy sauce.

The hand rolls are followed by kanpachi nigiri with yuzu tobiko, garlic truffle salmon nigiri topped with ikura, chutoro nigiri with caviar, and shima aji (striped jack) nigiri with yuzu kosho.

The garlic truffle salmon nigiri has been a customer favorite thus far, due to its buttery texture and smooth mouthfeel.

The nigiri are followed by a wagyu hand roll, dragon hand roll — unagi, avocado, cucumber and unagi sauce — and miso soup.

The rollmakase ends with a choice of dessert. Options include yuzu sorbet, green tea ice cream, shiso mint chip, miso salted caramel and strawberry matcha. Shiso mint chip and miso salted caramel have been customer favorites so far.

The rollmakase experience includes a good amount of food, but customers also have the option to add on the eatery’s wagyu ramen for an additional $29.

The restaurant accepts walk-ins, but customers are encouraged to make reservations via OpenTable (choose “Nori Bar Waikīkī: The Rollmakase Experience” under “Experiences”).
